Tiger Nut Resistant Starch Balls

A tiny ball that delivers a salty and sweet punch!

Equipment

  • 1 Blender or Food processor (I used the Twister Jar with my Blendtec)

Ingredients
  

  • ½ cup Tigernut flour
  • ½ cup Organic unsweetened coconut flakes
  • ¼ cup Coconut oil Organic and cold-pressed
  • ¼ cup Collagen peptides
  • 8 Medjool dates Organic and pitted
  • ¼ tsp Cinnamon
  • ¼ tsp Icelandic flake salt

Instructions
 

  • Place all ingredients into your food processor or blender.
  • Pulse until the mixture forms a smooth dough. (This will firm up as the coconut oil and the dates continue to blend.)
  • Shape the dough into balls.
  • Enjoy!
  • Store any leftovers in a glass jar in the fridge for up to one week.
